Enameled cast iron is a remarkable and robust material that performs well with modern culinary demands. Cast iron excels at both slow cooking and high-temperature searing, as it can be used reliably on any heat source, including induction, ovens, and grills. Its ability to retain heat efficiently allows for the use of lower heat settings, saving energy and time.

On the table, a hot covered dish will keep food warm for second servings. Cast iron can also be used to keep foods cold, making it an ideal choice for cold food servers on a hot summer day. It can even be placed in the freezer for food storage or advanced food preparation.

High heat temperatures should only be used for boiling water for vegetables or pasta, or for reducing the consistency of stocks or sauces. Overheating cast iron will cause food to burn or stick, as it retains heat so efficiently. The vitreous enamel surface is impermeable, making it ideal for raw or cooked food storage and for marinating with acidic ingredients such as wine.

For frying and sautéing, the fat should be hot before adding food. Bring the pan and fat or oil to the correct temperature together, indicated by a gentle ripple in the oil's surface or bubbling and foaming for butter and other fats. If either begins smoking or the butter starts browning, the temperature is too high, and the pan should be cooled slightly before proceeding.
